Blueberry Egg Muffins

Ingredients:
2 large eggs
1 egg white
1/2 C fat free Greek yogurt, plain
1 tsp cinnamon
1 tsp vanilla
1 Tbsp agave syrup
1 C blueberries

Directions:
Preheat oven to 350.  Beat eggs, egg white, yogurt, cinnamon, vanilla, and agave syrup until smooth.

Spray muffin tin with cooking spray.

Add 2 Tbsp of batter to 9 of the muffin cups. Divide remaining batter (if any left) evenly to cups. Divide blueberries evenly between each muffin.





Bake for 15 minutes. If batter is still runny, bake another 5 minutes.

Serving Size: Makes 9 muffins

Cauliflower Bread Sticks (DELICIOUSNESS!!!)

Deliciousness cooling on a rack

Makes 8 servings of 2 bread sticks each, or 8 large bread sticks

Prep Time: 15+ minutes
Cooking Time: 35 minutes

INGREDIENTS: 
2 C grated cauliflower 
2 eggs 
2 cups shredded reduced fat free mozzarella cheese
 1 tsp oregano 
1 tsp parsley
 1 Tbsp garlic powder
 2 Tbsp parmesan, grated  


DIRECTIONS: 
Preheat oven to 350.  
Cut the Cauliflower into pieces and throw them into a food processor, or grate them-- you'll need at least 2 cups.

Put the "riced" cauliflower in microwave for 8 minutes.

After cooking the cauliflower pour into a bowl, add in the egg and the cheese.

Cut a piece of parchment paper to fit the bottom of a cookie tray. Take that same piece of parchment paper and line an 8x8 baking dish with it. Don’t cut it.

Spread the unbaked “dough” into the baking dish, pressing down with a spatula to cover the bottom evenly. Bake in a preheated 350 degree oven 20-25 minutes until dough is set, just starting to brown around the edges and not wet on top.

Remove pan from oven and increase temp to 450. Transfer the parchment and set dough to the baking sheet. Cut the dough into strips and separate carefully. Sprinkle with garlic powder and a little parmesan or shredded cheese if desired.

Bake another 15 minutes in 450 degree oven until top is slightly browned and bottoms are crispy. Cool on a wire rack.

Tuna Patties (over Sauteed Veggies)
My patties fell apart - so I turned it into a scramble.

Makes 2 hearty servings.
INGREDIENTS:
3 C coleslaw mix
.5 C onions, diced
7 oz tuna in water, drained
1 egg
1 Tbsp olive oil

DIRECTIONS:
Heat half oil and saute onions until fragrant. Add cole slaw and saute until softened. Put to the side.  Mix tuna, egg, and desired seasonings and form 2 patties.  Add other half of oil and heat skillet.  "Fry" tuna patties until heated and browned.  Top coleslaw with patties.  ENJOY!
